Keto Egg Muffins

With our simple step-by-step instructions, you can quickly whip up a batch of these flavorful egg muffins to fuel your mornings!

Ingredients:

  • 6 large eggs
  • 60g heavy cream
  • 30g grated cheddar cheese
  • 30g diced bell peppers
  • 30g diced onions
  • 30g chopped spinach
  • 2 tablespoons (8g) chopped fresh herbs (such as parsley or chives)
  • Salt and pepper to taste
  • Cooking oil (such as olive, avocado oil or butter. Don't touch vegetable oils!) or non-stick spray for greasing

Instructions:

  1. Preheat your oven to 180°C (350°F) and grease a muffin tin.
  2. Combine eggs and heavy cream in a mixing bowl—season with salt and pepper.
  3. Add the grated cheddar cheese, bell peppers, onions, chopped spinach, and fresh herbs to the egg mixture. Stir gently to distribute the ingredients evenly.
  4. Fill each muffin cup about three-fourths full with the egg mixture.
  5. Bake in the oven for 15-20 minutes or until the muffins are set and slightly golden.
  6. Once cooked, remove the muffin tin from the oven and let the egg muffins cool for a few minutes. They will slightly deflate as they cool.
  7. Gently remove the egg muffins from the tin using a spoon or spatula.
  8. Serve the Keto Egg Muffins warm for a nutritious breakfast or snack, or refrigerate for later.

Note: Feel free to customise your Keto Egg Muffins by adding other keto-friendly ingredients such as cooked bacon, diced tomatoes, or grated zucchini. Get creative and make them your own!
