DiKeto cloud bread is one of our most simplest, but favourite keto bread recipes! I've been making the keto version of keto bread (Sometimes known as oopsie bread) for many years. I just love the fluffiness and how light they turn out. Whether you call them oopsie bread or keto cloud rolls, they are a great low carb alternative for bread. A huge advantage is you'll probably always have the ingredients in your cupboard to bake this!
What is Keto Cloud Bread?
Well, keto cloud bread (Often called oopsie bread by americans), is a low carb bread replacement that is super light and has an airy texture. It requires absolutely no flours. Yep, you heard that right, no flours like coconut or almond flour. Did you know that you can buy our very own keto bread? Like keto cloud bread, it has no coconut or almond flour.
The 3 main ingredients included in keto cloud bread are not only low carb, but high in protein and also low in calories. So if you are counting calories on a keto diet, then you'll find yourself baking this bread more frequently.
What's in Keto Cloud Bread?
3 main ingredients:
- Egg Whites
- Mascarpone cheese OR cream cheese
- Sea Salt
The normal way to make keto cloud bread is to use eggs and cream cheese. Beat the egg whites until stiff peaks forms a lovely fluffy texture.
Why's it called keto oopsie bread?
Apparently, they were called low carb oopsie rolls initially because they came out by accident! No way! The author of the original oopsie bread recipe was trying to make a different kind of bread recipe, but make this bread substitute instead! I'm so glad this came out as a mistake!

One of my favourite keto bread recipes. So light and fluffy, our keto cloud bread is great for sandwiches, rolls, burges and desserts.

Ingredients
-
3 Large Eggs (Room temperature; whites and yolks separated)
-
85g Mascarpone Cheese (Can also use cream cheese)
-
0.6g Sea salt or pink salt
Directions
Preheat the oven to 300 degrees
Line a baking sheet on a baking try an grease lightly.
In a large bowl, beat the egg whites until stiff peaks form (Can also use an electric mixture for this)
In a second large bowl, use the mixer to beat the mascarpone, egg yolks, and sea salt until smooth.
Fold the egg whites into the mascarpone mixture with a spatula. Use a folding motion to incorporate, without breaking down the air bubbles in the egg whites.
Scoop the mixture into six circular discs onto the parchment paper. Bake 25-35 minutes, until golden.
