Keto Fudge: Creamy Chocolate Fudge Made with a Sugar Alternative

In short

This keto fudge is a creamy chocolate fudge made by simmering double cream with butter and Groovy Keto Powdered Erythritol, then melting in Groovy Keto Dark Chocolate Buttons. Each piece has 0.5g net carbs and 98 kcal. It takes about 40 minutes of hands-on time, then sets in the fridge.

Classic fudge relies on boiling sugar to a precise temperature, but keto fudge works a different way. KetoFocus's keto fudge shows that a slow reduction of cream, butter and powdered sweetener, a homemade condensed milk, gives the fudge its structure. Hey Keto Mama's chocolate fudge uses the same simmered cream and then melts low-carb chocolate into it off the heat. Kirbie's Cravings' 2-ingredient keto fudge proves how far you can get with just chocolate and a condensed milk. Our version keeps that two-stage method, uses a standard 300ml pot of UK double cream, and pairs Groovy Keto Dark Chocolate Buttons with Groovy Keto Powdered Erythritol.

The result is a dense, dark keto fudge that cuts into neat squares and keeps its shape in a gift box. Each piece has 0.3g sugars. If you want something softer, try our keto chocolate mousse; for more festive ideas, see our keto Christmas guide.

Tips for smooth keto fudge

  • Use a powdered sweetener. Granulated erythritol may not dissolve fully in the cream and can leave a gritty bite. Powdered erythritol melts in as the cream warms.
  • Choose a wide pan. Cream rises fast when it boils. A wide, heavy pan gives it room and lets it reduce more evenly.
  • Don't rush the reduction. The simmer is what makes this fudge rather than a soft ganache. Wait until the cream coats the back of a spoon.
  • Rest before the chocolate goes in. Five minutes off the heat lets the cream cool slightly, so the buttons melt smoothly and the butter doesn't separate out.
  • Cut it cold. Fudge straight from the fridge cuts cleanly. Warm the knife in hot water and wipe it dry between cuts.

  • Net carbs0.5g per piece

Ingredients

  • 300ml double cream
  • 30g unsalted butter
  • 50g Groovy Keto Powdered Erythritol
  • 200g Groovy Keto Dark Chocolate Buttons
  • ¼ tsp (1.5g) fine sea salt

You will also need a 15cm square tin, baking paper, a wide heavy-based saucepan and a spatula.

Allergens: contains milk (cream and butter). See the allergen notes under Nutrition.

Method

  1. Line the tin. Line a 15cm square tin with baking paper, leaving some overhang on two sides so you can lift the fudge out later.
  2. Start the cream. Put the double cream, butter, powdered sweetener and salt in a wide, heavy-based saucepan. Warm over a medium heat, stirring, until the butter melts and the sweetener dissolves, then bring to a gentle boil.
  3. Reduce. Turn the heat down and simmer for 20 to 25 minutes, stirring often and scraping the sides, until the cream has thickened, turned pale golden and coats the back of a spoon. You should have about 200ml.
  4. Melt in the chocolate. Take the pan off the heat and leave it for 5 minutes. Add the chocolate buttons, leave them for 1 minute, then stir slowly until the mixture is smooth, thick and glossy.
  5. Set. Scrape the fudge into the tin and smooth the top. Leave it to cool for 20 minutes, then cover and chill for at least 4 hours, or overnight, until firm.
  6. Cut. Lift the fudge out using the paper. Cut it into 25 squares, 5 by 5, with a large sharp knife, wiping the blade with a hot, damp cloth between cuts.

Ways to change it

  • Orange: stir the finely grated zest of 1 orange into the cream as it reduces.
  • Mocha: dissolve 1 tsp instant coffee in the hot cream before the chocolate goes in.
  • Nutty: scatter 40g chopped toasted hazelnuts over the top before it sets. This adds nuts as an allergen.
  • Salted: press a few flakes of sea salt onto the top once it has cooled for 20 minutes.

Each of these changes the nutrition figures slightly, so the table below is for the plain recipe.

Making fudge ahead for gifts

Keto fudge is one of the easiest Christmas gifts to make ahead. Make it up to 1 week before, keep it in the fridge, then pack the squares in paper cases in a small box or tin on the day you give it. Tell the person to keep it in the fridge. You can also freeze it for up to 3 months. For more ideas, see our keto Christmas gift ideas. If you are ordering Groovy Keto Dark Chocolate Buttons for festive baking, the last order date for Christmas delivery is 18 December 2026. Free delivery on orders over £30.

What makes it fudge?

Traditional fudge is sugar, butter and milk cooked to the soft-ball stage, then beaten so it sets with a fine, crumbly grain. Our toffee vs caramel guide explains how fudge differs from toffee and caramel. This keto version gets its body from reduced cream and chocolate instead, so it is smooth and dense rather than crumbly. For tips on melting chocolate without it seizing, read how to melt chocolate.

Nutrition

Per piece (1 of 25, about 19g):

Nutrient Per piece
Energy 98 kcal
Fat 10.1g
of which saturates 6.2g
Carbohydrate 4.9g
of which sugars 0.3g
of which polyols 4.4g
Net carbs 0.5g
Fibre 1.4g
Protein 0.7g
Salt 0.07g

Net carbs are carbohydrate minus polyols. On UK labels, fibre is already listed separately from carbohydrate, so it isn't subtracted again. Our guide to what polyols are explains how they appear on UK labels. Figures are calculated from the Groovy Keto Dark Chocolate Buttons and Powdered Erythritol pack labels and UK (McCance and Widdowson's CoFID) data for double cream (12-334), unsalted butter (17-661) and salt (17-367), and will vary with the brands you use. Each piece contains 4.4g polyols from erythritol. Excessive consumption may produce laxative effects.

Allergens: this recipe contains milk (cream and butter). The Dark Chocolate Buttons and Powdered Erythritol packs say they are packed in a facility where there may be traces of nuts, cereals, milk and eggs. Always check the current pack labels before making it for anyone with an allergy.

FAQ

How many carbs are in a piece of keto fudge?

Each piece of our keto fudge has 4.9g carbohydrate, of which 4.4g are polyols from erythritol, so it has 0.5g net carbs. It also has 98 kcal, 0.3g sugars and 1.4g fibre. The sugars come mainly from the lactose in the double cream, with a little from the chocolate buttons.

Why won't my keto fudge set?

Usually the cream was not reduced for long enough. It needs 20 to 25 minutes at a steady simmer, until it coats the back of a spoon and has dropped to about 200ml. Under-reduced fudge stays soft, like a ganache. If yours is still soft after a night in the fridge, keep it in the freezer and serve it cold.

Why is my keto fudge grainy?

Erythritol can form crystals as it cools, especially if it has not fully dissolved. Use a powdered sweetener rather than granulated, stir it into the cream before it boils, and keep the simmer gentle. A slightly firmer, less silky bite than sugar fudge is normal when you make it with erythritol.

How long does homemade keto fudge keep?

Keep the fudge in an airtight box in the fridge for up to 1 week, with baking paper between the layers. Because it is made with cream and butter, it softens in a warm room, so take out only what you need about 10 minutes before serving.

Can you freeze keto fudge?

Yes. Layer the squares in a freezer box with baking paper between them and freeze for up to 3 months. Defrost them in the fridge for a few hours. This makes it easy to make fudge ahead for Christmas gifts. The last order date for Christmas delivery is 18 December 2026.
