Chaffles are the latest craze into the keto world right now. When I first heard of chaffles, I was amazed I hadn't seen or created this before. Not only are chaffles ridiculously yummy, but they can easily be adapted for keto.
What is a chaffle?
I must say, a chaffle is probably the greatest thing I've ever tasted! So what is a chaffle I hear you say! Chaffle basically means CHEESE + EGGS= CHAFFLE. So that's basically 2 ingredients. This gives you the license to be creative and add whatever keto ingredient you want to it! My first thought was cocoa powder and a bit of powdered erythritol!
What equipment do I need?
We like to use our Mini Waffle Maker, as seen below. You can pick these up on Amazon or eBay. Although, any waffle maker will do the job
The chocolate chaffles with my favourite toppings: Powdered Erythritol and melted butter.
Ingredients
- 1 egg
- 3 tbsp grated mozzarella cheese
- 1 tbsp cocoa powder (We like to use Dutch-processed 20/22% fat, as it gives a smoother and richer taste)
- 1 tbsp Groovy Keto Erythritol & Stevia blend (Powdered)
- 1/4 tsp Gluten free baking powder
- 1/4 tsp Xanthan gum
- 1/4 vanilla extract
- A pinch of salt
- 1 tsp Coconut Flour
- 2 tbsp Milk or whipped cream
Instructions
- Turn on the mini waffle maker and grease it light (ideally with butter, but we careful not to burn your hands) or cooking spray (Olive oil or coconut oil)
- Combine all the ingredients in a bowl and mix well
- Spoon the chaffle batter and close the waffle maker lid. Allow to cook for up to 4 minutes
- Serve with whatever toppings you like such as powdered erythritol or some sugar-free syrup or my favourite, smother with loads of butter!
This recipe makes 2 chaffles, so repeat for the next one!
