Keto Lemon Bars made with Almond Flour and Lemon

For the Lemon Filling:

  • 4 large eggs
  • 160g powdered erythritol
  • 120ml fresh lemon juice
  • 2 tablespoons lemon zest
  • 30g coconut flour
  • 1/2 teaspoon baking powder
  • Powdered erythritol (for dusting)

Instructions:

  1. Preheat the oven to 180Β°C (350Β°F) and line a baking dish with baking paper measuring 8x8 inches.
  2. Combine the almond flour and powdered erythritol in a mixing bowl for the crust. Thoroughly combine the melted butter and vanilla extract by mixing both.
  3. Gently and uniformly press the crust mixture onto the base of the baking dish. Bake for 10-12 minutes until lightly golden.
  4. Whisk together eggs and powdered erythritol in a separate bowl for the lemon filling. Add the lemon juice, zest, coconut flour, and baking powder. Whisk until smooth and no lumps remain.
  5. Pour the lemon filling mixture over the pre-baked crust, spreading it evenly.
  6. Return the baking dish to the oven and bake for 20-25 minutes or until the filling is set.
  7. Once baked, remove the baking dish from the oven and let the lemon bars cool completely in the dish.
  8. Once cooled, refrigerate the lemon bars for at least 2 hours to firm up.
  9. Cut the chilled lemon bars into squares and dust with powdered erythritol before serving.
  10. Serve and enjoy these tangy and refreshing Keto Lemon Bars as a delightful keto-friendly dessert or snack!
