- 40g powdered erythritol. Or use our Erythritol and Stevia blend
- 80g unsalted butter, melted
- 1/2 teaspoon vanilla extract or Groovy Keto Vanilla Liquid Stevia Drops
For the Lemon Filling:
- 4 large eggs
- 160g powdered erythritol
- 120ml fresh lemon juice
- 2 tablespoons lemon zest
- 30g coconut flour
- 1/2 teaspoon baking powder
- Powdered erythritol (for dusting)
- Preheat the oven to 180°C (350°F) and line a baking dish with baking paper measuring 8x8 inches.
- Combine the almond flour and powdered erythritol in a mixing bowl for the crust. Thoroughly combine the melted butter and vanilla extract by mixing both.
