Ingredients:

  • 240g almond flour
  • 30g coconut flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 3 large eggs
  • 100g granulated erythritol (or your preferred keto-friendly sweetener)
  • 120ml melted coconut oil
  • 1 teaspoon vanilla extract
  • 200g grated zucchini (about 1 medium-sized zucchini)
  • Optional: Chopped walnuts or sugar-free chocolate chips for added texture

Instructions:

  1. Preheat your oven to 180°C (350°F), grease a loaf pan with cooking oil, or line it with baking paper.
  2. In a large mixing bowl, combine almond flour, coconut flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg. Stir until well combined.
  3. Combine eggs, erythritol, melted coconut oil, and vanilla extract in a bowl. Whisk until smooth.
  4. Pour the wet ingredients into the bowl of dry ingredients. Mix until a thick batter forms.
  5. Gently fold in the grated zucchini and any optional add-ins, such as chopped walnuts or sugar-free chocolate chips.
  6. Evenly distribute the batter in the prepared loaf pan.
  7. Bake for 50-60 minutes in the oven or until a toothpick comes out clean from the centre.
  8. Once baked, remove the zucchini bread from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
  9. Slice the Keto Zucchini Bread into thick slices and enjoy it as a tasty and nutritious breakfast or snack!
