These low-carb tortillas are perfect for satisfying Mexican food cravings while following a ketogenic lifestyle. Made with almond flour and simple keto ingredients, these tortillas are soft, flexible, and versatile.   1. Mix almond flour, coconut flour, psyllium husk powder, baking powder, and salt in a mixing bowl.
  2. Combine eggs, warm water, and olive oil in a bowl and whisk until well blended.
  3. Pour the wet ingredients into the bowl of dry ingredients and mix until a dough forms.
  4. Knead the dough for a few minutes until it becomes smooth and sticks together.
  5. To make individual servings, separate the dough into small pieces and shape them into balls.
  6. Place dough between parchment paper and flatten it into a tortilla shape with a rolling pin.
  7. Heat a non-stick skillet or griddle over medium heat. Carefully transfer the flattened tortilla to the skillet.
  8. Cook the tortilla for 1-2 minutes on each side until lightly golden and cooked through.
  9. Take the tortilla that has been cooked in the skillet and transfer it onto a plate. Use a fresh sheet of baking paper for each tortilla. Please repeat the same procedure with the remaining portions of dough.
  10. Allow the tortillas to cool slightly before using them. They will become more pliable as they cool.
  11. Fill your keto tortillas with your favourite fillings, such as grilled chicken, sautéed vegetables, or avocado.
