Really enjoyed this carrot cake, although a little on the dry side. Nothing some cream cheese topping won't fix. Added mix into 2 7" cake tins and worked perfectly

Tastes amazing.

This mix is so delicious I sometimes think I’m cheating on my carb intake. I often add a handful of chopped walnuts before baking but most of the time I combine this cake mix with the walnut cake mix and have 24 cupcakes of happiness. The cupcakes freeze well too so I batch bake to save time plus have a sweet snack any time I need one. They defrost within 30 minutes or if you can’t wait that long, a quick 20-30 second burst on defrost in the microwave will do the trick.
