How much do I use instead of sugar?

Our powder is about 3× sweeter than sugar, so you only need roughly a third of what a sugar recipe asks for. As a rule of thumb, 1 tsp of our powder ≈ 1 tbsp (3 tsp) of sugar. Start with a little less than you think, taste, then add more — it's far easier to sweeten up than to rescue something that's gone too sweet.

Will it spike my blood sugar? Is it diabetic-friendly?

The sweetness in monk fruit comes from natural compounds called mogrosides, not from sugar — so our decoction powder has no sugar and just ~1 kcal per serving, no impact on blood glucose, and won't knock you out of ketosis. That's exactly why it's popular with people managing diabetes or watching their blood sugar. The only other ingredient, soluble tapioca fibre, is a non-digestible fibre your body doesn't absorb as sugar. Why does yours have no erythritol — and does that matter?

Can I bake with it and add it to hot drinks?

Yes. It's heat-stable and dissolves cleanly into tea, coffee, porridge, yoghurt, sauces and baking. One thing to know: because it's 3× sweeter than sugar you only use a small amount, so it won't add the bulk, browning or caramelising that sugar does. For bakes that rely on sugar for structure — meringues, some cakes — use a recipe written for concentrated sweeteners, or pair it with a bulking keto sweetener.

Does it have a bitter or liquorice aftertaste?
